Gli organi di controllo preposti al controllo dell’igiene sono il SIAN (Servizio Igiene degli Alimenti e della Nutrizione), Servizi Veterinari e NAS. Gli standard di riferimento per le verifiche ispettive da parte degli organi competenti (ASL, NAS, Comuni, etc.) sono attualmente fissati rispetto a:
rintracciabilità, formazione del personale, sistema documentale (disponibilità della documentazione operativa presso le postazioni di lavoro, verifiche ispettive interne.

Il regolamento 852/2004 del Parlamento Europeo e del Consiglio “sull’igiene dei prodotti alimentari” definisce come condizione necessaria quella di garantire un livello elevato di tutela dei consumatori in merito alla sicurezza degli alimenti. Per fare in modo che ciò che accada occorre prevedere una strategia integrata da applicare solo alle imprese e non alla produzione primaria per uso domestico. Per la sicurezza degli alimenti devono essere avviati programmi e procedure di sicurezza basati sul sistema di autocontrollo HACCP. I requisiti del sistema HACCP devono essere flessibili al punto da poter essere applicati in diverse situazioni. Le autorità competenti, i responsabili e gli operatori del settore alimentare devono collaborare per far in modo che i controlli vengano effettuati nella maniera più efficace possibile.
